6 Tbl. unsalted butter, softened
1/2 c. cookie butter
1 c. light brown sugar, packed
1 egg
1 tsp. vanilla
1 1/4 c. all-purpose flour
1/2 tsp. salt
1 tsp. baking powder
1 c. white chocolate chips
Preheat oven to 350 degrees. Lightly grease a 8x8-inch baking dish; set aside. In a large bowl, using a hand mixer, cream together the butter, cookie butter and brown sugar. Add the egg and vanilla and mix well. Scrape down the sides of the bowl. In a separate medium bowl, combine the flour, salt and baking powder and add to the butter mixture along with the white chocolate chips.
Gently stir together until just combined. Press batter evenly into prepared baking dish and bake for 24-25 minutes (I like mine a little under-done, so I usually bake 23 minutes). They may appear soft, but they set up once they cool. Cool completely and then cut into bars and serve.
