Ingredients
2 T vegetable oil
1 c uncooked white rice
1 onion, chopped
1/2 green bell pepper, chopped
½ T Minced Garlic
2 c water
2 chicken boullion
1 (10 ounces) can of diced tomatoes and green chiles
2 t chili powder
½ t cumin
1 t salt
Directions
1) Heat oil in a deep skillet over medium heat.
2) Saute garlic, onion, and bell pepper.
3) Add rice and cook until browned.
4) Stir in water, bullion, and tomatoes.
5) Season with chili powder, cumin, and salt.
6) Cover, and simmer for 30 minutes, or until rice is cooked and liquid is absorbed.
