Recipe
Ingredients- Muffin Batter
1 ½ c all-purpose flour
1 ½ t cinnamon
1 t pumpkin pie spice
1 t baking powder
½ t baking soda
¼ t salt
⅓ c vegetable oil
½ c brown sugar
¼ c granulated sugar
2 large eggs
2 t vanilla extract
½ c sourdough discard
1 c pumpkin puree
Ingredients- Streusel Topping
½ cup all-purpose flour
¼ cup brown sugar
¼ cup granulated sugar
1 teaspoon ground cinnamon
¼ cup melted butter
Directions
1) Preheat your oven to 375 degrees and prep your muffin tin. Use paper liners
2) In a large mixing bowl, add your sugars and oil. Use the stand mixer to mix these up. Just remember to not overmix the batter.
3) Add your eggs and vanilla and continue to mix together.
4) Next, add your sourdough and pumpkin and continue to mix.
5) Next add your dry ingredients- spices, baking powder, baking soda, salt and flour and fold and stir these ingredients in using a rubber spatula. You do not want to over-mix the muffin batter.
6) Fill muffin cups about 2/3 full
7) Mix up the flour, sugars, flour and melted butter to create the streusel. Mix together using a fork.
8) Sprinkle some streusel crumble over the top of each muffin.
9) Bake in the oven for 25 minutes or until a toothpick comes out clean.
