Ingredients
1 cup pumpkin puree
¾ cup granulated sugar
½ cup vegetable oil
1 egg
1 T vanilla extract
1 ¼ cups all-purpose flour
1 cup old-fashioned oats
1 T baking powder
1 t baking soda
1 t ground cinnamon
½ t salt
Directions
1) Prep. Preheat the oven to 350°F.
2) In KitchenAid, mix pumpkin puree, sugar, oil, vanilla, and 1 egg until smooth.
3) In a separate medium bowl, mix flour, oats, baking powder, baking soda, cinnamon, pumpkin pie spice, and salt.
4) Mix flour mixture to the pumpkin mixture and mix just until you see a little flour left. Stir just until combined. Do not over mix.
5) Drop cookies by the spoonful about 2 inches apart. Bake for 10-13 minutes, or until a toothpick inserted in the center comes out clean and the bottoms are lightly browned.
*Notes
Glaze: These cookies also taste amazing with a glaze drizzled over top. My favorites are the maple glaze and cream cheese glaze.
