Ingredients
1 lb. chicken tenders
1 teaspoon salt
1 Tablespoon soy sauce
½ teaspoon sugar
¼ teaspoon pepper
1 Tablespoon oil
1 teaspoon minced garlic
1 cup (10 oz.) can stewed tomatoes
½ cup cider vinegar
½ cup chopped onion
1 ½ cup sugar
1 Tablespoon soy sauce
½ cup chopped green pepper
½ cup crushed pineapple
1 Tablespoon cornstarch
2 Tablespoon cold water
Directions
1) In a medium size mixing bowl, mix salt, soy sauce, sugar, and pepper.
2) Cut the chicken into bite-sized pieces and add the pieces to the mixing bowl with the sauce. Marinate as time allows.
3) Using a large frying pan, heat oil with garlic.
4) Add chicken. Don't touch for 4 minutes, then flip.
5) Cook for another 4 minutes and move around the pan, making sure they are fully cooked.
6) In a stockpot using medium heat, mix stewed tomatoes, vinegar, onion, sugar, soy sauce, green pepper, and pineapple. Let simmer.
7) Mix cornstarch and cold water in a separate bowl.
8) Add the cornstarch mixture as desired to the pot to thicken the sauce.
9) Add the cooked chicken to the sauce mixture in the pot.
10) Cook on medium-high heat until heated.
11) Serve over rice.
