Ingredients
4 tablespoons butter
1 cup peanut butter
1/2 cup light corn syrup
1/3 cup light brown sugar
Pinch salt
4 cups cornflakes, lightly crushed
1 teaspoon vanilla extract
1 cup chocolate chips
Directions
1) In a ziplock bag, add the cornflakes, and using either a rolling pin or your hands, crush the cornflakes until they are half crumbs and half flakes.
2) In a medium saucepan over medium heat, melt butter. Add peanut butter, corn syrup, brown sugar, and salt and continue to cook, stirring, until melted and smooth.
3) Stir in vanilla and crushed cornflakes until just combined.
4) Spoon into a greased 8x8 pan or a cupcake tin with liners. Lightly pack the mixture down.
5) Melt choc chips in a liquid measuring cup microwave for 20 seconds. Stir and repeat until melted.
6) Pour the melted chocolate on top of the cornflake mixture, and spread out using a spatula to form an even layer.
7) Finish with sea salt to your liking.
8) Place in the refrigerator. Remove one hour later and slice into bars. Store in a sealed container in the fridge for up to 3 days.
