Ingredients
4 baked potatoes
3 T oil
1 T grated Parmesan cheese
½ t garlic salt
¼ t paprika
⅛ t pepper
4 bacon strips, cooked and crumbled
1 c shredded cheddar cheese
¼ c sour cream
1 sliced green onion
Directions
1) Preheat oven to 475 degrees F
2) Cut potatoes in half lengthwise; scoop out pulp, leaving a 1/4-inch. shell (save pulp for another use).
3) Place potato skins on a greased baking sheet.
4) Combine oil, parmesan cheese, salt, garlic powder, paprika, and pepper; brush over both sides of the skins.
5) Bake at 475 degrees F for 7 minutes; turn. Bake until crisp, about 7 minutes more.
6) Sprinkle bacon and cheddar cheese inside the skins. Bake 2 minutes longer or until the cheese is melted.
7) Top with sour cream and onions. Serve immediately.
