Ingredients
1 ¾ cups flour
1 teaspoon baking soda
¾ teaspoon salt
2 ripe bananas, mashed
½ cup brown sugar
½ cup sugar
¼ cup butter
2 large eggs
1 teaspoon vanilla extract
½ cup sour cream
Crumb Topping:
3½ tablespoons, melted butter
½ cup flour
¼ cup light brown sugar
1 tablespoon sugar
½ teaspoon cinnamon
Directions
Preheat oven to 350 F. Line a 12-count muffin pan with paper liners. Set aside.
Crumb- In a small bowl. Combine the melted butter, flour, sugars, and cinnamon. Set aside
Banana-In a small bowl, mash the bananas and stir in the brown sugar. Set aside.
DRY- In a medium-sized bowl, combine the all-purpose flour, baking soda, and salt.
WET- In a large bowl with a handheld mixer, cream the butter and granulated sugar for about 2 minutes or until well combined. Mix in the eggs and the vanilla.
Use a rubber spatula to stir in the sour cream and banana mixture.
Use a rubber spatula to fold in the dry ingredients
Use a ¼ measuring cup to fill each muffin cup ¾ full
Sprinkle the crumble evenly on top
Bake at 350 F for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean
