Ingredients
For the dough:
1 cup flour
1 teaspoon baking powder
¼ teaspoon salt
⅓ cup + 2 tsp warm milk or water
½ tsp vanilla
The coating:
1 Tablespoon unsalted butter – melted
3 Tablespoons granulated sugar
1 teaspoon ground cinnamon
For the glaze:
2 Tablespoons powdered sugar
1/2-1 teaspoon milk
1/4 teaspoon vanilla
Directions
Preheat the oven to 375℉ and grease a bread loaf pan
In a medium mixing bowl, add the flour, salt, and baking powder and stir to combine
Mix the milk and vanilla in a cup, then pour it into the flour mixture. Combine and knead for 4 minutes to form a soft and smooth dough ball, transfer to a clean and lightly floured work surface, and roll it to form a log (about 10 inches long)
Press down on it slightly to flatten it out to about 2 inches wide, and then cut in half by length and width. Giving you 4 sections. Cut each section into 5 pieces, equaling 20 bite-sized pieces
Roll each piece into a ball. Place the dough balls in a small mixing bowl, pour the melted butter over them, and gently toss so that each piece is coated in butter
In a cereal bowl, mix the cinnamon and sugar, then pour it over the buttered pieces of dough. Toss again, making sure that every piece is covered in cinnamon sugar
Transfer to the prepared loaf pan, make sure they lay flat and are not stacked on top of each other, and bake for 8- 10 minutes
While that bakes, make the glaze by mixing in a cereal bowl the powdered sugar, milk, and vanilla
When the cinnamon roll bites are ready, let them cool for just a few minutes and then drizzle with the glaze. Enjoy warm!
