Ingredients
1 ½ cups cooked rice
1 ½ cups and ½ cup whole milk
¼ teaspoon salt
1 egg
⅓ cup white sugar
1 tablespoon butter
1 teaspoon vanilla extract
½ teaspoon cinnamon
Directions
1) Place cooked rice in a large saucepan. Add 1 ½ cups milk and salt; cook on medium heat. Stir until thick and creamy for 10 minutes or until the rice mixture is thick.
2) In a separate bowl add the remaining ½ cup milk, egg, and sugar whisk together for about 2 min.
3) Add milk mixture to cooked rice mixture and continue cooking, stirring continuously, until well blended, 2 to 3 minutes more.
4) Remove the saucepan from heat; stir in butter, cinnamon, and vanilla extract.
5) Top with nuts, raisins, or cranberries.
