Directions
1) Preheat heat nonstick pan on medium heat
2) Add 1 pad of butter to the pan and melt
3) Crack the egg into the pan and season with a shake of salt and pepper
4) Cover with lid, and let sit for 2 minutes DON'T MOVE THE EGG!
a. Sunny-Side Up: Cook on one side only. (the white will be slightly done, the yolk will be runny.)
b. Over-Easy: Cook on one side, gently turn over and cook on the other side (the white will be cooked completely and the yolk will still be runny.)
c. Broken or Cooked Yolk: Cook on one side, crack the yolk with your spatula, gently turn over, and cook through completely
5) Using a plastic flipping spatula, when the edges begin to furl up flip the egg
6) Season the other side of the egg with 1 shake of salt and pepper
