Ingredients
4 baked potatoes
3 Tablespoons of oil
1 Tablespoon grated Parmesan cheese
½ teaspoon garlic salt
¼ teaspoon paprika
⅛ teaspoon pepper
4 bacon strips, cooked and crumbled
1 cup shredded cheddar cheese
¼ cup sour cream
1 sliced green onion
Directions
1) Preheat oven to 475. Grease a baking sheet. Set aside
2) Cut baked potatoes in half lengthwise; scoop out pulp, leaving a 1/4-inch. shell (save pulp for another use).
3) Place potato skins on the greased baking sheet.
4) In a small mixing bowl, combine oil, parmesan cheese, salt, garlic powder, paprika, and pepper; brush over both sides of the skins.
5) Bake for 7 minutes; turn. Bake for 7 minutes more until crisp.
6) Sprinkle bacon and cheddar cheese inside the skins—broil 2 minutes longer or until the cheese is melted.
7) Top with sour cream and onions.
