Ingredients-Salad
1 large English cucumber
2 large carrots
¼ cup chopped cilantro
¼ cup roasted peanuts
2 tsp sesame seeds
Ingredients-Dressing
3 tbsp rice vinegar
1 tbsp soy sauce
1 tbsp maple syrup
1 tsp sesame oil
¼ tsp salt - or to taste
pinch of red pepper flakes - optional
Directions
1) Chop cilantro. Set aside
2) Start by slicing off the ends of the carrots. Then peel and discard the skin. Keep peeling through the carrot to create the ribbons. Set aside
3) Cut off the ends of the cucumber and keep peeling through to create the ribbons. Set aside.
4) In a small mixing bowl, whisk together the rice vinegar, maple syrup, soy sauce, sesame oil, red pepper flakes and salt.
5) In a large bowl, combine the ribboned carrots and cucumber with the cilantro, sesame seeds and peanuts. Then, pour the dressing over and stir to combine.
