Oven 400F (375 convection)
For
3 lbs veggies (beets, parsnips, potatoes, carrots, radishes)
1 small red onion
cut into cubes about 3/4" (or 1" for potatoes); toss with
1/4c olive oil
1.5t kosher salt
1/4t black pepper
Spread on a sheet pan with space between items. (I use two pans for 3 lbs veggies)
Cook 30 min (22 min convection)
Add
2T fresh rosemary or 2t dried
Cook 10-15 min more (7 min convection)
