Wash
500g / 1.1lbs kumquats
in warm water.
Cut the kumquats in half remove any seeds. Mince them in a mini-cuisinart until they're at a size you like for marmalade
Juice
an orange
or alternatively, use
1/2 c store-bought orange juice.
Crush
6 cardamom pods
with pestle and mortar. Place them in a teabag or cheesecloth.
Place
orange juice
1/2 c water
400g sugar
1 cinnamon stick
crushed cardamom pods in teabag
in a saucepan large enough to hold them and the kumquats(later). Bring to simmer and allow the sugar to dissolve. This should take about 5 minutes.
Add
the kumquats
and simmer 15 to 20 minutes over medium heat, stirring occasionally.
Check the consistency by putting a tablespoon full or so on a small plate and placing it in the fridge for 5 minutes. If the consistency is to your liking, the marmalade is done. If it’s still too runny, you can let it simmer for a couple more minutes. If it’s too firm, you can add more hot water and let it simmer for a few more minutes.
Finally, add
2T lemon juice,
give the marmalade another stir and turn off the stove.
