Barley Chicken Casserole

Original recipe yields 4 servings
Ingredients
1 tbsp olive oil
1 onion, thinly sliced
2 carrots, diced
12 mushrooms sliced
2 ½ cups chicken stock
1 cup barley
1 green bell pepper, chopped
cooked chicken meat, shredded
2 slices ham, diced
1 teaspoon dried thyme
1 teaspoon dried marjoram
1 bay leaf
Salt to taste
ground black pepper to taste
1/4-1/2 cup chopped parsley
Directions
Preheat oven to 375 degrees F (190 degrees C)
Saute onions, mushrooms, carrots until onions translucent. Add parsley for last minute. Combine in 9x13 inch baking dish sauteed veg, green pepper, barley, chicken, ham, thyme, marjoram, parsley, bay leaf. salt and pepper to taste. Pout in stock and mix
Cover and bake 1 hour and 10 minutes. Check liquid level periodically.
MIx chopped parsley into finished dish.
