Fried Pawns with coconut milk

Shell, devein

1 lb raw praws

Make a stock from the shells/heads, or cook shells/heads in clam juice in microwave.

Heat

2T peanut oil

in frying pan and fry

6 curry leaves or 1 daun salam

1 onion, finely chopped

2 fresh red chillis, seeded and chopped

3 cloves finely chopped garlic

on low heat for 5 minutes,or until onions are soft and golden. Add

1/2-1 t sambal ulek

1/2 t laos powder

and fry a few seconds. Then add

(the prawns)

and stir fry until they change color. Stir in

1/2c prawn stock

1 oz creamed cocnut, grated

1/2 t salt

1/2 t palm sugar

Alternative:

use 2/3c thick cocnut milk instead of prawn stock and creamed coconut
