Place
1 large onion, diced (46 Cal)
2 jalapenos, seeded and diced (8 cal)
2 jars Salsa Verde (or one tall jar) (440 cal)
1t ground cumin
in slow cooker; stir to combine. Add
2 lbs chicken thighs, skinless (1500 Cal/oz)
and toss around.
Cook on Low for 6-8 hours, or High for 2-4 hours, until chicken is 165F internal temp.
Shred chicken with a fork; serve with
Rice (2 c cooked) (408 Cal)
1 can reheated black beans (379 Cal)
Fresh lime wedges
Cilantro
