Fire Chicken

Original source, substantially modified.

Preheat oven broiler.

Mix:

¼ c gochugaru (Korean red-pepper flakes)

2T gochujang (Korean red-pepper paste)

3T light brown sugar

2T pre-chopped garlic

1T pre-chopped ginger

1T soy sauce

½ t black pepper

1/4 c water

in a medium bowk, and add

1lb boneless, skinless chicken thighs, cut into ¾-inch cubes


break into bite-sized pieces

3-4 plain rice-cakes

optional: cook the rice cakes in some oil until they're slightly burned.


Heat

2T canola oil

in a 10-inch cast-iron pan until fairly hot, and add

the chicken mixture

Cover and cook 8-10 minutes, stirring now and then. Add

the rice cakes

about half way through.

While this is cooking, thinly slice

one ball mozzarella

When the chicken is cooked, cover it with

the sliced mozzarella

and broil about 90 seconds. Remove from oven and sprinkle with

2 scallions, chopped, for garnish.
