Steam
12 eggs
over 1" of water and a steamer basket. Cover and steam for 17 minutes for 2 large eggs, or 15 min for 6 large eggs. Reduce time if using regular (not large) eggs. Shock with cold water and peel. Can also do pressure-cooker: once the steam vent closes, cook 5 min; cool 5 min, dump into icewater to cool.
Remove yolks and mash them. Add
2 t Dijon
1/6 c mayo (full fat) and 1/6c sour cream (more if necessary for consistency)
1 T minced shallot
a squeeze of lemon juice
1/4t tabasco or sriracha
1/2 t dill
smoked paprika to taste
and blend, adding
a little olive oil
at the end to make a smoother consistency.
