Make grits in the microwave using
1 c grits
2 c vegetable stock (more like 3)
½ cup whole milk
¼ t ground black pepper
½ c shredded sharp Cheddar (3 oz)
Salt
Cook for 2.5 or 3 min; stir; cook another 2.5 - 3 min.
In a large skillet, heat
4 tablespoons extra-virgin olive oil
and add
1 shallot, minced
2 garlic cloves, sliced
and cook until fragrant. Add
Pinch of red-pepper flakes
1 bunch collard greens (12-16 ounces), stems removed, leaves cut into 1-inch pieces (or better, rolled into a "cigar" and cut into 1/4-wide shreds)
1 bunch Swiss chard (16 ounces), leaves and stems cut into 1-inch pieces (same) (alt: 1 lb of fresh spinach)
Cook until wilted (5 min?) and even slightly charred; then add
Salt and black pepper
1 c vegetable (or chicken) stock
and cook until very tender, perhaps 10-15 min. Finish by stirring in
2 tablespoons apple cider vinegar
Serve grits on plates, topped with greens, and with some
Hot sauce
on the side
