Cribbed from here, with extensive modifications and restructuring. Serves 2 - 3.
In a pressure cooker, heat
3T oil
until hot; in it sauté
1 large onion, chopped
4 garlic cloves, minced (or 1.5 T pre-minced garlic)
3 carrots, shredded
until golden, about 4 minutes. Stir in
2T tomato paste
2t ground cumin
1/2t ground black pepper
1T harissa paste if available
cayenne to taste (perhaps 1/4t) or red pepper flakes (perhaps 1/2t)
and sauté 2 minutes more. Add
5c chicken broth (use Better-Than-Bouillon)
1.5 c red lentils
zest of 1 lemon
juice of 1/2 lemon
2t sumac
1t smoked paprika
and pressure cook for 7 minutes after the pressure-lid starts chattering. Serve with
a few tablespoons chopped fresh cilantro
a dollop of yogurt
dukkah (optional)
a sprinkle of sumac (optional)
