Potato Kofta

Prep: 20; Cook: 45

Scrub

1 lb potatoes;

Cook in salted water till done; drain and mash.

Soak

1 oz raisins

in cold water for a few minutes; drain and squeeze out excess water.

Finely chop

small piece ginger

1 green chilli

mix with

1T chopped coriander

(the raisins)

Take spoonfuls of mashed potatoes; make indent and fill with raisin mix; reshape into ball. Coat with

flour

Heat oil for depp frying (350F). Cook kofta a few at a time until crisp and golden. Drain.

Finely chope

2 med onions

4 ripe tomatoes

Heat 2T oil; stir fry onion until golden. Add

1/.2t turmeric

1.5t coriander

1/2t cumin

salt

chilli powder

and fry 2-3 minutes. Add tomators and cook to pulp, adding water if needed.

Cook sauce until oil separates out; add

3 c water

Stir well, return to boil. Reduce heat and cook 20 min.

Add Kofta and cook 10-15 min more until thicker. Serve.
