Crock Pot Mississippi Pot Roast

3 pound chuck roast
in
2 tablespoons vegetable oil
Remove to slow cooker. Cover with
1 packet (2T) ranch dressing mix
1 packet (3T) dry onion soup mix (or au jus gravy mix)
(see below)
½ cup (1 stick) salted butter
8 peperoncini peppers
and cook on low about 8 hours. 1.5 hours before finish, optionally add
Carrot pieces
Potato pieces
Break apart with a fork, discarding any large fat pieces, and serve.
Replacement for those mixes:
1/2 T buttermilk powder
1+ t dried parsley
4½ t dried minced onion flakes
1/2 t garlic powder
½+ t onion powder
1/4 teaspoons dried dill
1/4 teaspoons dried chives
1/4 teaspoons ground black pepper
1/4 teaspoons salt
1/16 teaspoon celery seed
1/16 teaspoon paprika
and separately
2t sodium-free beef bouillon granules (or 2T BTB beef)
