Saag Paneer

Frozen chopped spinach : 1 bag

Paneer : 250 grms ( Cut into cubes) OR

Tofu: 1/2 box of firm or extra-firm tofu

Mustard Seeds - 1/2 tsp

Garlic : 2 ( Crushed)

Ginger and garlic paste : 2 tsp

Big Onions : 1 ( medium size) ( Chopped finely)

Green chilly : 1 ( Sliced lenth wise)

Tomato : 1 ( Chopped finely)

Chilly powder : 1/2 tsp

Garam Masala : 1 tsp

Salt : To taste

Oil : To fry ( 2 -3 tsp)

Yogurt : 3 tsp

Water : 1/4 cup

Preparation :

Cook

1 bag frozen spinach

for 8 min in microwave, with no extra water. Drain and press dry.

Roughly chop

1 large onion

and blend to a paste in the blender, adding a little water if needed.

Heat

1T oil

in a large saucepan over high heat until almost smoking. Add

1/2t mustard seeds

Cook until they pop -- a few seconds -- and then add

1t chopped garlic

1/2 sliced thai green chilli, seeds removed

and fry for a minute. Add

the onion paste

2t or more of chopped ginger

and fry until golden brown, reducing heat as needed.

Add

1 small can cubed tomatoes, or 1 chopped fresh tomato, or 4oz tomato sauce

and fry till tomatoes are soft.

Add

(1/2t chili powder)

1/2t garam masala

salt to tast

the cooked spinach

and cook until everything is heated through.

Whisk together:

1/4 c water

1T yogurt

and add this to the saucepan, and heat some more.

Finally, add

1/2 cube of tofu, chopped into 1/2" cubes, OR 1/2 lb paneer, similarly chopped.

Mix everrything well, and cook for another 3 - 5 mins.
