Salmon Cakes

(makes 4 patties)


Preheat oven to 375


Combine in a bowl:


30g whole wheat bread, torn into coarse crumbs

3g scallions, finely chopped

5 sprigs parsley, stems removed, finely chopped

380g cooked salmon, skin and bones removed, finely flaked

62g red pepper, diced

45g celery, finely chopped


Beat together:

2 eggs beaten

1 tsp matouk's (or sriracha, add 10 cal to total)

generous squeeze of lemon juice (about 2 wedges)


Mix wet into dry, form into 4 thin patties


Heat 2 tsp canola in cast iron pan.

Place patties in hot oil and put into oven.


Cook 14-15 min one side, flip and cook another 7 minutes
