Candace's rich rice pudding
Put into microwave cooker:
1 c rice
1/2g milk
1. Cook 45 min in microwave, stirring every 10 min or so. Transfer to a large pot on the stove, and heat to a boil; reduce heat.
2. Cook, stirring, over lowered heat, until it gets really thick.
3. Meanwhile, in a med bowl, blend
1 egg
1 c sugar.
4. When rice has thickened, take a few T of rice and add them to the egg/sugar mix, and stir. Add more, do it again. Keep doing this until you’ve mixed in about a cup of rice; then pour all of that into the rice in the large pot and stir it up.
5. Continue heating/stirring about 10-15 minutes until consistency is right for rice pudding.
Optional: add a little vanilla, some cardamom, some cinnamon.
Candace suggests making "lines" of cardamom or cinnamon across finished pudding.
