Eggs in chilli sauce (sambal goreng telur)

Hard boil

3 eggs

stirring gently for the first 3-4 minutes to center the yolks.

Finely chop

1 med. onion

1 clove garlic

Grate finely

3 brazil nuts

Heat

3T peanut oil

and fry

(onion and garlic)

until onion is soft and golden. Add

1/2t trasi

3t sambal ulek

1/2 t laos powder

(the brazil nuts)

and fry a few seconds. Add

1/2t salt

2 t palm sugar

1/2 c coconut milk

lemon juice to taste

and simmer gently until thick and oily in appearance. Place in shelled/halved eggs, spooning sauce over them. Serve hot or at room temp.
