Bacon Egg Cheese Strata

(suitable for Sacred Harp breakfasts; makes 2 @ 9 x 13 pan)

The variations I used, in making two 9 x 13 pans of strata, were

1. about 1.5 lbs bacon, cut into half-inch lengths before cooking to save a lot of time!

2. about 1.5 red peppers

3. one whole jar (8 - 12 oz) of sun-dried-tomatoes-in-oil (with the oil drained off but saved), chopped up. The "julienne cut" ones save you some time.

4. instead of bread, 2 loaves of ciabatta -- one was garlic, and one was perhaps "rustic wheat"...I'd have used all garlic if there had been two in the store . I sliced each loaf in half along a plane parallel to the table, then cut it into something like 1" x 1" squares.

5. I think I used something like 14 or 15 eggs 

6. 1/2 c mayo

7. 3/4t mustard

8. 1/4t pepper.

In large skillet cook

    1.5 lbs bacon,

drain on paper towels, and crumble into a huge bowl

Chop

    1.5 red peppers

    one tall jar of sun-dried tomatoes

    12-16 scallions

and add to the bacon.

Grease

    2 @ 9 x 13 baking dishes

using the oil from the sun-dried tomatoes (or other oil if you forgot to save it)

Slice

    2 garlic ciabatta into 1" x 1" squares, about 3/4" thick

Grate

    4 c smoked cheddar cheese (about 12-16 oz) [un-smoked cheddar also works, as would many other cheeses[

Layer

   bread

   bacon mix

   half the cheese

   bread

   bacon mix

   ...and then stop before adding the last bit of cheese.


In large mixer-bowl, combine

  14 eggs

  2 1/4 c milk

  1/2 c mayonnaise

  3/4 t salt

  1/2t pepper

  3/4t ground mustard

and pour over the stuff in the baking pans; sprinkle with

remaining cheese

Cover with plastic wrap and let sit overnight.

Remove from fridge 30 min before baking; preheat oven to 350. (personally, I toss the baking pan into the oven during the preheat and it seems to work fine)

Bake 30-40 min, covered with foil; uncover and back 5-10 min more until knife comes out clean, and interior temperature is at least 160.

(I also usually skip the foil, and it seems to work fine, and be done in about 35 minutes total.)
