Double/triple/quadruple sauce as needed.

SKEWERS
Soak Bamboo skewers, if using, in warm water for a few hours.
PREPARE FOODS OF CHOICE FOR MARINATING
1.5 lb prawns, shell, de-vein
Boned chicken, cube (white &/or dark)
scallops, rinsed
mango & watermelon- cubed
onions, peppers
SAUCE (increase amounts depending on amount of food)
Mix until sugar dissolves
3 T lemon juice
1/2c lowfat coconut milk
1/2t sambal ulek
1/2t trasi
1T dark soy sauce
1 t palm sugar
rind of one lemon, finely grated
2 small cloves garlic, chopped
Add foods of choice
Marinate 15 m to 2 hrs.
GRILL OR BROIL
Preheat oven to "broil" or prepare grill.
Thread food onto skewers, brush lightly with oil, cook under broiler or on grill until desired doneness.
REDUCE REMAINING SAUCE
Simmer, stirring constantly, adding more coconut milk and soy sauce to taste
Use for dipping
Serve with brown rice.
