Nigella Lawson's Guinness cake, cribbed from here, with modifications, etc.
Oven 350
Butter a 9 inch springform pan and line with parchment paper.
Combine
1 c. Guinness or other stout
20T butter
in a microwave-safe dish, and heat until butter melts; let cool. Add
3/4c unsweetened cocoa
1.75 c. sugar
Set aside. In a small bowl combine and mix well
3/4 c. sour cream
2 large eggs
1 T vanilla extract
Add these to Guinness mixture and mix. Add
2 c. all-purpose flour
2.5 t baking soda
1/2 t kosher salt
and whisk until smooth. Pour into buttered pan and bake until risen and firm, 45 min to 1 hour.
Place pan on wire rack and cool completely in pan, then remove from pan.
Top with confectioner's sugar, sprinkled from a mesh strainer, just before serving.
Linked recipe has a recipe for topping: 1.25c confectioner's sugar, 8 oz. room-temp cream cheese, 1/2c heavy cream, which is used to ice the top of the cake only.
