Pea Soup Moosewood

In a pressure cooker, cook

3c dried split peas

7c water

1 bay leaf

2t salt

for about 15-18 min.

Meanwhile, saute:

2T oil

1c minced onion

3 cloved crushed garlic

1c minced celery

1 small thinly-sliced potato

2c. sliced carrots

adding a little water to steam them as needed. Add to soup, and simmer.


15 min before serving, add

1/4c dry red wine

1/4t dried mustard

1/4t dried thyme

1t. sesame oil


Just before serving, add

3T vinegar

1 c chopped tomatoes

1/4c chopped fresh parsley
