West Indies Tomato and Okra curry

Tomatoes and Okra
Prep: 20 min
Cook: 20-25 min
Prep
1lb frozen okra
in the microwave, cooking a little less than the recommended time.
At the same time, chop
2 med tomatoes
thinly slice
2 onions
and remove the stalk and seeds from
1 green chilli pepper
and chop finely.
Heat
2 T oil
in a skillet and add
(the onions)
and fry to golden brown. Add
1 clove garlic
(the chopped chilli pepper)
salt to taste
Stir fry a few minutes until all moisture is gone. Add
(the okra)
(the tomatoes)
and cook 4-5 min, stirring occasionally.
