Pasta with Sausage and Parm

A no-recipe recipe from Sam Sifton, so amounts don't matter.

Cook

1 pound of orecchiette or other suitable pasta

in boiling salted water. 

Meanwhile, break up 

1/2-1 lb sausage (bacon also works)

into small bits and cook. Set aside. Add

1 batch broccoli rabe 

(other veggies like cherry tomatoes, spinach, mushrooms can also work here)

to the pan and cook it briefly in the remaining fat.

Scatter 

some sage leaves, perhaps chopped a bit

over the sausage as well, maybe some pepper, and add a little of the pasta water (and/or some cream) to make the sauce velvety. 

Drain the pasta and mix with the sausage, and grate

parmesan

over the top and serve.
