Dan Dan Noodles 1

Noodles

Cook Udon noodles.

Rinse VERY well with cold water.

Mix with some canola oil to keep them from sticking.

 

Paste

 

   6 tsp of pre-chopped garlic [I'm too old to spend my life peeling garlic cloves]

   about a 4" piece of ginger, peeled, about 1" diameter

   1 tsp salt

   3 Tbsp warm water

 

Blend in Cuisinart until the garlic and ginger are just mush. Then add

 

   1/4-1/2 tsp Szechuan peppercorns

   4 Tbsp soy sauce (anywhere from 3T to 6T works)

   1 t granulated sugar

   1 15oz can of Joyva sesame tahini

   about 4T creamy peanut butter

   optional: hot oil

 

Blend. Add more PB or hot water to make paste smooth.

 

Mix the sauce into the noodles.

 

Serve with condiments:

   * hot oil with pepper flakes

   * ground szechuan peppercorn

   * finely chopped scallions

   * cilantro
