Preheat oven to 350
Grease a bread pan.
Mix in medium bowl
1.75 c all-purpose flour
2.25 t baking powder
1/2 t salt
In the stand mixed bowl, blend until creamy
1/3 c softened butter
2/3 c sugar
3/4 t grated lemon rind, or a little orange extract
Beat in
1-2 beaten eggs
1-1.25 c ripe banana pulp (about 2-3 bananas)
Add the dry ingredients from above in about 3 parts, mixing after each addition and scraping sides as needed.
Optionally fold in
1/2 c broken nut meats
1/2 c finely chopped dried aprocots
Pour batter into the greased bread pan, depressing the center a little bit, and making sure the sides are a little above it.
Cook 1 hour; target internal temp is 200-205F.
Cool before slicing.
