Cod, Potato, and Leek casserole

600 grams of cod, 800 g of potatoes, 200 g onions, 50 g Nicoise olives, 1 tbsp olive oil, four leeks.

Saute the minced onion in the oil. Add the cod, which you have cut into small chunks and have poached in advance, the potatoes which you have cut up finely, the olives and the leeks, which you have cut up and blanched beforehand.

Cook this for five minutes with a lid.

Put the whole thing into an earthenware casserole dish and bake in the oven at 200 for 30 minutes. You may wish to add a little water in the course of baking.

If you like you may wish to add 3 tbsps of tomato coulis
