Roast Root Vegetables

Preheat oven on cenvection-bake to 475

Trim the root-end, then par-cook for 10 minutes

4 medium-large beets

Cut into pieces

3 large yukon potatoes, pieces about 1.5"

the beets, similar size

1 turnip, in pieces about 3/4" to 1"

Toss in a large bowl with

1/4c canola oil

several sprigs of fresh rosemary

Place on a baking pan with silpat and roast until potatoes are done, about 20-30 min. Toss once partway through if you remember.
