Rye pancakes

Preheat waffle iron.

Mix in large blender bowl

1 c all purpose flour

1 c rye flour

2 T sugar (skip for savory pancakes)

2 t baking powder

1 t baking soda

1/2 t salt

6 T buttermilk powder (optional)

Separately mix in small blender bowl

2 eggs

1.5 c milk (and add up to 1/4c more if it's too thick)

1/2 c greek yogurt [or replace milk and yogurt with 2c buttermilk, and skip the buttermilk powder]

2 eggs

3 T oil

Blend liquids into dry ingredients, mixing just enough to combine decently. Let sit 5min for baking soda/powder to work.

Use 1/2c of mix for a two-waffle iron; cook 4 min by timer.
