Prep 25; cook 35

Wash

cauliflower stalks from two cauliflower

and cut into small pieces. Finely chop

2 onions

1" piece of ginger

1 clove garlic

Finely chop

3-4 ripe tomatoes

Heat

2-3T oil

in a large frying pan. Sprinkle in

1t ajwain seeds

and cook util they pop. Stir in

(the onion mix)

and stir-fry until golden-brown. Add

salt to taste

chili powder to taste

1/2 t turmeric

1 t ground coriander

Stir fry a few minutes; then add

(the chopped tomatoes)

Cook until tomatoes are soft, and then stir in

(cauliflower stalks)

Continue cooking another 3-5 min. Pour in

1.25 c water

and bring to the boil. Reduce heat, cover, and simmer until cauliflower is tender and all moisture has evaporated. Sprinkle

1t dried mango powder

on top, and stirring continuously, cook another few minutes.
