New Mexican Hot Dish, cribbed from here and somewhat modified
Prehat oven 425.
Saute in oil
3/4 to 1 lb ground beef
Add
1T flour (or so)
a pinch of salt
Set aside. In the same pan cook
a chopped onion (or two)
garlic
jalapeno
Return meat to the pan, and season with
chile powder
ground cumin
oregano
Add
1 can chopped tomatoes, perhaps mexican or salsa-style
a little water to loosen things up
Build up a casserole in a suitable dish with
a layer of meat
a corn tortilla
maybe a little grated cheese
repeated until you're running out of meat. Top with
more grated cheese
Bake about a half-hour, until everything is bubbling. Serve with
chopped red onions

anything else that seems good
