skewered grilled prawns

Soak

Bamboo skewers

in warm water for a few hours.

While they're soaking, shell and de-vein

1.5 lb prawns

Put

3 T lemon juice

1/2c thick cocnut milk

1/2t sambal ulek

1/2t trasi

1T dark soy sauce

1 t palm sugar

rind of one lemon, finely grated

2 small cloves garlic, thopped

into a bowl and stir until sugar dissolves. Add

(the prawns)

and marinate from 15 m to 2 hrs.

Preheat oven to "broil" or prepare grill.

Thread 3 or 4 prawns on soaked bamboo skewers, brush lightly with oil, and cook under broiler or on grill until prawns are lightly browned.

Meanwhile, simmer

(the leftover marinade)

in a saucepan, stirring constantly. Add more

coconut milk

soy sauce

to taste, and serve as a sauce
