Clafoutis

Preheat oven to 375

Grease an 8 x 8 pan.


Cream together

    1/2c. butter

    2/3c. sugar

until light and fluffy. Beat in 

    4 eggs

until blended. Add

    1c flour

    1T lemon juice

    1t vanilla

    1/8 - 1/4t nutmeg

    1/4t salt

and beat until smooth.


Reserve a few berries fro garnish (or not) and fold

    1 pint blueberries (or up to almost 1 qt)

into batter. Pour into greased pan.


Bake at 375 for about 40 minutes, until lightly browned; insert a knife and cook until it comes out dry. 


Garnish with

     the reserved berries

and serve with 

     whipped cream.
