Acorn squash with maple syrup
3 acorn squash, unpeeled, halved through the stem, and seeded
3 tablespoons unsalted butter, diced
3 tablespoons pure maple syrup, plus extra for serving
Good olive oil
Kosher salt (3t) and freshly ground black pepper (1t)
Flaked sea salt, such as Maldon, for serving
Oven 350. Cut squash in half and turn face up. Put butter and maply syrup into squash, and cover the cut edges of the squash with butter too. Sprinkle with kosher salt and black pepper. Bake for 40-60 minutes, until done. Serve with a sprinkle of Maldon salt.
