Waffles
(Adapted from Joy of Cooking)
Plug in waffle iron to preheat. Set up a timer to be used to do 4-minute timing,
Make the batter
Place in blender bowl
2 T cooking oil (canola)
and briefly blend to spatter it up on the sides.
Add
3 eggs
1.5c milk
and blend to mix and spatter up the sides as well.
Add
1.75c flour
2t double-acting baking powder
1/2t salt
1 T sugar (omit for savory waffles)
and blend briefly, scraping dry ingredients off the side of the jar if necessary. Blend just enough to mix; if there are a few lumps, it's fine. Let sit 5 min to thicken a bit.
Cook
Pour 1/4c+ of batter on each side of the waffle iron; close it and cook 4 min - 4:15. Remove waffles with a fork to a plate with a cooling rack set on it. Repeat until all waffles are cooked.
For a non-blender version: beat eggs; mix in other liquid ingredients. Mix up dry ingredients, and then pour in wet ones and combine with a few strokes of a wooden spoon. (Don't use a whisk -- you'll regret it.)
SMALL BATCH VERSION
1T oil; blend to splatter about

Blend again
Add
7/8c flour
1t baking powder
1/4t salt
1/2T sugar (optional)
and blend, scraping dry ingredients from sides. Use 1/4c on each side of waffle iron; cook 4 min per waffle.
