Cabbage with Mustard Seeds

Prepare

1 pound firm green cabbage, quartered, cored, and sliced ⅛ inch thick


Heat

2 tablespoons oil

in a cast-iron pan; when hot, add

1 t. black mustard seeds

½ t. cumin seeds

and cook a few second until seeds start to pop. Then toss in

½ t. grated garlic

½ t. grated ginger

1/4-½ t. cayenne, or 1 t. finely chopped serrano or other green chile

½ t. turmeric


and cook util the garlic and ginger have lost their raw flavor. Add


the cabbage

salt and pepper to taste


and cook until limp (you may need to add some water and cover briefly), and serve with


Juice of ½ lime
