Makes 2 to 2 1/2 dozen cookies

Note: These can be used as decorator cookies too.
Ingredients:
1/2 cup butter
1 cup sugar
1/2 teaspoon vanilla extract
1 egg
2 cups flour
1 teaspoon baking powder
1/4 teaspoon salt
Cream butter, sugar, vanilla and egg*; beat until light. Add sifted dry ingredients and mix throughly. Tightly wrap dough in plastic and chill for 3 to 4 hours.
*If you want to color dough, add food coloring gell/paste with egg.
Divide dough into about three portions and only work with one at a time while leaving the others in the refrigerator to chill. Roll out dough to 1/8 inch thickness**. Cut into shapes with floured cookie cutters.
**If you are making checker-board cookies, use two colors and roll each into two long ropes and press together. Chill for about 8 minutes and remove to slice into 1/8 inch cookies.
Bake on ungreased cookie sheets in 325 degrees oven for about 8 minutes. Cool on wire rack.
