Vegetable Soup
Makes 12 cups
Ingredients:
1 tablespoon olive oil
1 yellow onion, chopped
10 ounces of carrots, chopped
10 ounce of celery, chopped
2 cans diced tomatoes, including liquid
1 can black beans, including liquid
15 ounces water
1 cup rice
In a large stock pot, add olive oil and chopped onion, and sautee until golden. Add the other ingredients. Bring to a gentle boil. Then turn down the heat and simmer until carrots and rice are cooked.
