Vegetable Soup

Makes 12 cups

Ingredients:

  • 1 tablespoon olive oil

  • 1 yellow onion, chopped

  • 10 ounces of carrots, chopped

  • 10 ounce of celery, chopped

  • 2 cans diced tomatoes, including liquid

  • 1 can black beans, including liquid

  • 15 ounces water

  • 1 cup rice

In a large stock pot, add olive oil and chopped onion, and sautee until golden. Add the other ingredients. Bring to a gentle boil. Then turn down the heat and simmer until carrots and rice are cooked.
