Baking Temperature: 325 degrees
Time: 17 to 18 minutes, then 15 minutes

1/3 cup oat flour (make in a spice mill)
1 2/3 cups rolled oats
1/2 cup granulated sugar
1/2 teaspoon salt
1/2 teaspoon cinnamon
3 - 4 cups dried fruit and nuts (walnuts, almonds, dried cranberries)
1/3 cup creamy peanut butter (or almond butter)
1 teaspoon vanilla extract
6 tablespoons butter, melted
1/3 cup honey
1 tablespoon water
Prepare a large cookie sheet with a sheet of parchment paper.
In a spice mill, grind 1/3 cup of rolled oats until the grain size is that of flour.
In a bowl, stir together oat flour, rolled oats, sugar, salt, cinnamon, dried fruit, and nuts. In a larger bowl, whisk together the peanut butter, vanilla, melted butter, honey, and water. Slowly add in the oat mixture to the wet ingredients, and toss until the mixture is evenly crumbly.
Spread the granola onto the lined cookie sheet, pressing firmly to 1 inch thick.
Bake for 17 to 18 minutes at 325 degrees until the granola is golden brown. Remove from the oven and allow to cool. Separate granola into edible sized pieces and then bake again for another 15 minutes.
