Honey Banana Nut Bread

Makes 1 loaf

Baking Temperature: 350 degrees/ 300 degrees

Time: 25 minutes/30 minutes

Ingredients:

  • 1/3 cup butter, softened

  • 1 egg

  • 1 cup honey or maple syrup

  • 1 cup mashed banana (about 3 ripe bananas)

  • 2 cups flour

  • 3 teaspoons baking powder

  • 1/2 teaspoon salt

  • 1/2 cup chopped nuts (walnuts, or pecans)

With a mixer, beat together the butter, egg, honey, and banana.

Mix together the flour, baking powder, and salt. Add to the creamed mixture and stir until moistened. Fold in optional chocolate chips or nuts.

Pour into a greased loaf pan. Bake at 350 degrees for 25 minutes. Turn the oven down to 300 degrees and continue baking for around 30 minutes, or until the top springs back when lightly pressed.

If making muffins:

  • Bake for 350 for 25 minutes, then turn down temperature to 300 for another 10 minutes. Check with a toothpick to make sure they are cooked through. Makes about 24 medium muffins.
